Alex joined Brend Hotels while he was at college, joining the Royal & Fortescue as a full time waiter after he completed his studies. He went on to hold various positions within the establishment and swiftly rose to a position as Assistant Manager at the Royal & Fortescue Hotel in 2009. Two years later, he became Senior Assistant Manager and in early 2014, he moved across to our Barnstaple restaurant, 62 The Bank, as the Manager.

“It’s fantastic working in a restaurant with such a vibrant atmosphere. We really care about the quality of our food and we listen hard to customer feedback, as we just want to keep getting better and better. When someone says to me ‘That’s the best steak I have had in my life’, it’s a real buzz.’ We work hard to source the best fresh local produce and we use all our care and imagination to create great dishes. We never take the easy route, we invest time and energy. So for example, I make my own home made ‘jus’, it takes three days to make it but it is worth it. It is so exciting working in a great restaurant in north Devon where everyone is so committed to such high standards.”

Justin started his career as a Kitchen Porter at Saunton Sands Hotel, before training as a chef at The Park Hotel in Barnstaple. A spell at the Royal & Fortescue as Third Chef followed, before returning to Saunton Sands Hotel, where he rose to the position of Head Chef at their acclaimed bistro restaurant, Sands on the Beach. Justin moved to our Barnstaple restaurant to become Head Chef at 62 The Bank in January 2015.
